Inexperience + anonymity = higher probability of mistakes or opportunism.
That doesn't mean most new SP's scam. It means the risk distribution is wider. Some are angels. Some are confused. Some are learning the difference between "deposit" and "donation". And yes - some realise very quickly that disappearing with your money is faster than building a reputation.
You're also leaning heavily on form records, which is like judging shark attacks by reading surf club minutes. Most incidents never get reported because:
* Punters don't want the embarrassment.

* Or they chalk it up to "lesson learned" and move on.
Multiple independant studies on sex work safety and online transactional risk (consumer protection, digital fraud, informal markets) all land on the same boring conclusion:
